Stuffed Elk Peppers

4-5 peppers (choose large colorful peppers)
1 lb Elk burger
1 tomato
3 Green onions
1c Cilantro
1 box of Uncle Bens long grain rice
Salt & Pepper to taste
Preheat oven to 425°
Clean PEPPERS
Cook MEAT season the meat with salt & pepper while cooking
Cook RICE
Chop onion, cilantro and tomato. I like a lot of cilantro…it adds great flavor and makes the contents colorful, but choose as much or as little as you like. I ended up using 1/2 of a bunch.
Wash vegetables.
Combine all ingredients in bowl and spoon into peppers.
Cook for 20-25 minutes.
Serves 4-5
